It’s starting to feel like winter, and I like nothing better than comfort food. However, now that the holidays are over, I’m also trying to watch my calories and my macros so I eat to train. I recently discovered Gardein Beefless Ground. Low calorie, low fat, high protein makes it the perfect meat substitute. I’ve been craving chili, so I made up a new recipe of my own using this new protein source.

Ingredients
2 teaspoons olive oil
1 sweet onion chopped
3 tablespoons minced garlic
1 medium red bell pepper chopped1 bag of Gardein Beefless Ground
4 tablespoons chili powder
2 teaspoons ground cumin
1/4 teaspoon cayenne pepper
1 (28 ounce) can diced tomatoes
1 1/4 cups organic vegetable broth
2 (15 ounce) cans reduced sodium dark red kidney beans
1 (15 ounce) can sweet corn (no sugar added)
For topping: Daiya shredded cheddar, tortilla chips, avocado, cilantro

Directions
Place oil in bottom of slow cooker. Add pepper, onion, and garlic. Let heat for 10 minutes. Add thawed Gardein Beefless Ground. Add in chili powder, cayenne pepper, and cumin. Stir well. Add tomatoes, chicken broth, kidney beans and corn (drained and rinsed). Stir well. Leave on high to cook for 3 hours. Stir occasionally.

Makes 6 1.5 cup servings.
